POSITION:    Food Service Supervisor

                        Geary Community Nursing Home

 

LOCATION:  Economic Development, Concho, Oklahoma

Description Summary:  Responsible for the production and service of high quality meals; organize, supervise, and train dietary employees; purchase food and supplies, provide a sanitary and infection free environment; participate in the assessment process; write care plans, prepare menus (under supervision of dietitian).

 

DUTIES AND RESPONSIBILITIES:

 

  • Plan, develop, organize, implement, evaluate, and direct the dietary department and assume responsibility and accountability of the department. 
  • Plan diets and menus including regular and special diets, as prescribed by the physician, and reviewed by the RD consultant.  Maintain a file of standardized recipes, monitor food preparation and service to assure recipes are being followed, to maintain portion and cost control.  Review the therapeutic and regular diet plan menus to assure they are in compliance with diets ordered by physicians.  Process diet changes and new diets as received from nursing service.  Keep diet tray cards up to date to assure correct diets are followed. 
  • Purchase food and supplies from an approved and reliable vendor, supervise the receiving and storage.  Make sure food and supplies are available, so cooks can prepare and serve meals in a timely manner.  Maintain records of resident’s food likes and dislikes.  Plan substitutions for residents who refuse or are unable to eat food on menu.  Keep records, including menus as served, substitutions, special diet roster, number of meals served, purchases and food cost records. 
  • Assist in the recruitment, selection and training of department personnel.  Schedule department working hours and personnel and work assignments, to assure sufficient number of personnel are on duty at all times, during food preparation and service.  Prepare work and cleaning schedules, establish insect and rodent control procedures and monitor to assure that the schedules are being followed. 
  • Meet with department personnel monthly (in-service) with RD consultant to identify and correct problem areas.  Inspect the dietary area and practices at least weekly to assure all personnel are following infection control policies and procedures.
  • Develop and maintain a good working rapport with all departments and medical professionals, to assure that food service will be properly maintained to meet the needs of the residents. 
  • Accept assigned duties in a cooperative manner as directed by the Administrator.

QUALIFICATIONS:

 

  • Must have a high school diploma or GED.  Must be either a graduate of a course in Food Service Supervision, which meet the standards of the American Dietetic Association or be able to successfully complete the training necessary.  Previous experience in the dietary department of a health-care facility preferred.  Must be able to read and write the English language, use mathematics and units of measurements, have knowledge’s of menus, recipes, food purchasing, preparation and storage, ability to supervise and manage.  Must pass OSBI background check and pre-employment drug screening.

SALARY:  Commensurate with Education and work experience.
